CAULIFLOWER “MASHED POTATOES” RECIPE
All you need is a head of cauliflower, some nonfat milk/nondairy milk (I used Unsweetened Almond Breeze @ 40 calories for one cup), some garlic cloves, salt, and pepper. Optional: Laughing Cow Cheese or I can’t believe it’s not butter or Nonfat yogurt in place for the milk.
All you do is steam the cauliflower with the garlic cloves and then blend the steamed cauliflower with either the milk/nondairy milk/cheese/i can’t believe it’s not butter/yogurt WITHOUT THE GARLIC CLOVES (do NOT blend with the garlic cloves or else it will taste to spicy) and then add salt and pepper to taste.
THIS TASTES SO SIMILAR TO ACTUAL MASHED POTATOES!
