Apricot Cherry Tea Biscuits



2 cups unbleached flour
1/2 teaspoon Bob's Red Mill Aluminum Free Baking Soda
1/4 teaspoon baking powder
1/2 teaspoon Swanson Himalayan Crystal Salt
1/4 cup Bob's Red Mill Organic Extra Thick Rolled Oats
1/2 cup Swanson Fructose
1/2 cup Swanson Organic Unsulphured Apricots, chopped
1/2 cup Eden Foods Dried Cherries, chopped
1/2 cup Swanson Macadamia Nut Oil
1 teaspoon vanilla
1/4 cup plain skim or soy milk
2 egg whites
1 cup Swanson Organic Walnuts, chopped
Directions:

Preheat oven to 350 degrees F. Sift the flour, baking soda, baking powder, and salt together into a large mixing bowl. Mix in the fructose, oats, cherries and apricots. Stir in the oil, vanilla, and soy milk, mixing well. Take a heaping teaspoon and roll into a ball. Roll the ball into egg whites then roll in chopped walnuts. Place onto a non stick or parchment paper lined cookie sheet. Bake for 12 to 15 minutes, until just beginning to brown around the edges.

Serve with a nice hot cup of Swanson Tea!
